Something about this period in time is strange. I feel more in transition than ever before. It's like I'm going through all of the prep work, but haven't gotten to any of the juicy cooking yet. I'm slicing carrots and chopping onions for a magnificent soup. So many thoughts and ideas whirl around in my head each day, but I'm not quite sure what to do with them. Is the recipe going to need more salt? I've yet to taste the broth and decide.

salmon & chive stuffed breakfast pastries

9.25.2012

It was Adam's birthday this past Sunday. We were out till dawn, warranting a late morning sleep in. I let him rest and finally dragged myself out of bed to whip him up something special. I had been plotting these stuffed breakfast pastries and so everything was already in my fridge. It took about thirty minutes to throw everything together, and I have to say, they were pretty tasty.

Ingredients (serves 2)
4 large eggs
4 puff pastry shells
4 oz smoked salmon
3/4 cup smoked gouda, grated
1/3 cup creme fraiche
10 small chive stalks, chopped
1/2 tsp salt
juice from 1/2 lemon

Directions
1. Let your pastry shells defrost for about 30 minutes, and preheat your oven to 450F.
2. Lay the pastry shells out on a greased baking sheet and bake for 20 minutes or until golden brown.
3. Mix together salmon, gouda, creme fraiche, chives, salt, and lemon juice in a small bowl.
4. Cut out the center top of your pastries and fill with the salmon mixture . Close the top back up so that everything will melt inside from the heat of the freshly baked pastry.
5. Fry eggs in olive oil and place on top.

This past week has been strangely relaxing. At times the pace may have ticked a bit too slowly, but it's good to get the heart rate down every once in a while. I'm not so sure where this week will fall into the scope of things. Preceded by big events and knowing that exciting things are coming up, it's that strange lull in between: the calm before the storm and the settling after the earth quake.

The good thing is that with a new-found pace I was able to catch up with old friends. There was a road trip through PA on a beautiful fall weekend, and I managed to pack in a fair amount of hiking. The outdoor air is just beginning to change, and each breath of it feels so good. The crispy air in my lungs, it's about to be my favorite time of year.

personal day

9.21.2012

I had a little bit of an accident the other day and ended up taking an impromptu personal day from work. It was one of the best decisions ever. Adam has Tuesdays off, so we slept in late and then had breakfast in bed. After that we drove out to Tyler State Park for a day of hiking and fishing which was followed by some small town exploration, dinner, and ice cream. What a magical day. Personal days are a great invention. :)

We pulled ourselves out of bed. It was the crack of dawn on a Saturday, a time when none of us would have otherwise been awake. Luckily Brigette's van has all of the rear seats removed. We climbed in the back like girls at a slumber party, sprawled out all in a row and surrounded with plush blankets. Our heads resting on pillows we rode as the sun came up.

We pulled up to Golden Nugget flea market, our stomachs nourished with gas station sandwiches. The day was spent bargaining like a sleuth and filling up on treasures. The thrifting satisfied our need for adventure and we couldn't have been more content.

wanted: black boots

My beloved black ankle boots on their last leg, and I know that I'm going to need (want) a new pair to make it through the winter. Although very different, I've narrowed it down to three options. Which pair pair should be the lucky winner?
